Soft Gingerbread

I know I'm in late with this recipe, but I was so occupied with the Christmas preparation. I hope you even receive this cookie with love.

I have been making gingerbread according to the same recipe since years - if I remember well it was my wedding when I succeeded to purchase this recipe was named as "delicious gingerbread" and I made these sweeties as wedding thank you gift. This year I've done the first portion ... but it's over. Some pieces for the coffee at breakfast, other ones for snack, and of course I packed some and sent for Christmas present as well.

Back to the recipe: this cookie has not a hard biscuit form rather a softer like German "Lebkuchen". The recipe contains baking ammonia (ammonium hydrogen carbonate), but lots of people does not like using this material because it has an unpleasant pungent odor, mostly during the baking. Well, someone says it may be substituted with baking soda or baking powder. I don't know, when I tried to make gingerbread with baking powder - although I did not use exactly the same recipe - it became harder and biscuit form cookies (but it was perfect for making gingerbread house).

Another topic is the seasoning: we prefer gingerbread if it is not too sweet but spicy. Since long I use the gingerbread seasoning that can be bought in stores, I think no problem with it - I only add some more cinnamon to it. According to package this spice mixture contains the followings: cinnamon, nutmeg, coriander, ginger, fennel, cloves, allspice, anise, star anise, pepper, cardamom ... uhh, so it is difficult to compete with. As a homemade mixture I would try the cinnamon-ginger-cloves-allspice-nutmeg combination.

Boldog Karácsonyt Mindenkinek!  
Tudom egy kicsit elkéstem ezzel a recepttel, de eléggé elfoglaltak a karácsonyi előkészületek. Remélem azért szeretettel fogadjátok ezt a sütit.

Évek óta ugyanazon recept szerint készítem el a mézeskalácsot - ha jól emlékszem még az esküvőnkre szereztem a receptet, ami "finom mézeskalács" néven futott, és ez lett a köszönőajándékunk. Az idén is elkészült az első adag ... el is fogyott. Egy-két darab a reggeli kávé mellé, vagy uzsonnára, no meg azért két szép csomagot már elküldtem ajándékba is.

Visszatérve a receptre: ez nem a keksz, hanem inkább a puszedli állagú sütemény. A sütéshez szalakálit használok, de sokan nem szeretnek vele dolgozni, mert főleg sütés közben elég kellemetlen szúrós szaga van. Nos, egyes források szerint a szalakáli tulajdonképpen helyettesíthető szódabikarbonával vagy sütőporral. Én nem így tapasztaltam, bár nem pontosan ugyanezt a receptet használtam, de amikor sütőporos mézeskalácsot próbáltam sütni, az jóval keményebb, kekszesebb állagú lett (viszont kiváló alapanyag volt mézeskalács házikóhoz).

A másik dolog a fűszerezés: mi nem túl édesen és jó fűszeresen szeretjük a mézeskalácsot. Én évek óta a kész fűszerkeveréket használom, semmi bajom vele, csak még adok hozzá bónusz fahéjat. A mézeskalács fűszerkeverék elvileg a következőket tartalmazza: fahéj, szerecsendió, koriander, gyömbér, édeskömény, szegfűszeg, szegfűbors, ánizs, csillagánizs, bors, kardamom ... hát nehéz ezzel versenyre kelni, én házilag a fahéj-gyömbér-szegfűszeg-szegfűbors-szerecsendió fő kombinációval próbálkoznék.





Ingredients:
- 25 dkg honey
- 5 dkg butter
- 3 eggs
- 10 dkg sugar
- 1 gingerbread seasoning (27g)
- 1 tsp cinnamon
- 20 g baking ammonia
- 70 dkg flour (may mix rye and wheat)

Hozzávalók:
- 25 dkg méz
- 5 dkg vaj
- 3 tojás
- 10 dkg cukor
- 1 csomag mézeskalács fűszerkeverék (27 g)
- 1 tk fahéj
- 20 g szalakáli
- 70 dkg liszt (lehet felesben rozs és búza)

Preparation: you must make the dough one day before baking. Warm the honey with the butter until it is melted then let it cool. Beat the eggs with the sugar until well blended. Add the flavourings and the honey mixture, stir it well. Finally pour the flour and baking ammonia into the bowl and mix it well. Knead dough a little until it become smooth. Cover the bowl and let the dough rest in the fridge for 1 day (or at least 1 night).

Elkészítés: a tésztát sütés előtt 1 nappal korábban össze kell állítani. Melegítsük össze a mézet a vajjal, amíg az szépen elolvad, majd hagyjuk kihűlni. A tojásokat keverjük ki a cukorral, adjuk hozzá az ízesítőket és a vajas mézet, majd dolgozzuk kicsit össze. Végül öntsük bele a lisztet és a szalakálit is, előbb keverjük össze, majd addig gyúrjuk, amíg szép sima masszát kapunk. Letakarva pihentessük 1 napot a hűtőben (de legalább az éjszakát). 


Next day remove the bowl from the fridge 1-2 hours before baking to let it soften. I usually work with the dough in 2-3 portions: knead the dough a little, then flour on the kneading board and roll out dough with a rolling pin until 1/2 cm thick. (The dough is a little hard to work with but you will have nice muscles :) Now get your favourite cookie cutters and cut the shapes you wish.
After first portions it's time to preheat the oven for 180°C and line two cookie sheets with baking paper. Place the cookies on it leaving enough space between them. Beat a whole egg in a small bowl and brush cookies lightly.

Következő nap kivesszük a tálat a hűtőből úgy 1-2 órával a sütés előtt, hogy egy kicsit puhuljon. Én általában 2-3 adagban dolgozom fel a tésztát: kicsit átgyúrom, majd a deszkát lelisztezem, és sodrófával 1/2 centi vastagságú lappá nyújtom. (Kicsit nehéz vele dolgozni, mert kemény a tészta, de legalább szép kis izmaink lesznek :) És most elő a kedvenc kiszúrókkal, a tésztából kedvünkre kiszaggatjuk a formákat.
Az első adag után célszerű előmelegíteni a sütőt úgy 180°C-ra, és béleljünk ki 2 sütőlapot sütőpapírral. Helyezzük el a sütiket úgy, hogy elég hely legyen köztük. Felverünk egy egész tojást, és vékonyan megkenjük a sütik tetejét.


Bake gingerbread for 7-8 minutes until brown. Meanwhile you can work with the next portion of dough reusing the pieces are cut down. You can bake it quickly changing the 2 sheets: I have usually 4 sheets of cookies from this portion.

A mézeskalácsokat 7-8 percig kell sütni, amíg a kívánt barnaságukat elérik. Közben dolgozhatunk a következő adaggal, amibe belegyúrjuk a leesett darabkákat. A két sütőlappal gyorsan lehet dolgozni: nekem általában 4 tepsi sütemény jön ki egy ekkora adagból.



You can decorate the gingerbread in different ways: I make it a traditional way with sugared eggwhite. I think it is enough to use 1/2 egg white and stir (do not whip!) with powderred sugar until so creamy to draw well with it (appr. 10 dkg for half egg white). Add few drops of lemon juice to get a better flavour. Finally with a decorating pen or using a simple plastic bag with cut corner decorate the gingerbreads according to your taste.

Több módja is van a mézeskalács díszítésének: én egy hagyományos módszert követtem, cukormázzal. Szerintem elég csak egy fél tojásfehérjét kikeverni (nem felverni!) porcukorral, amíg elég krémes lesz ahhoz, hogy rajzoljunk vele (kb. 10 dkg kell fél tojásfehérjéhez). Adhatunk néhány csepp citromlevet is a mázhoz. Végül speciális dekoráló tollal, vagy egyszerűen egy kivágott sarkú nejlonzacskóval rajzoljuk meg kedvünk szerint a mézeskalácsokat.
