Strawberry Cream Soup and Pork Skewers with Asparagus

I'm always so enthusiastic at the end of spring when the market is full of fresh seasonal vegetables and the first fruits. Last Sunday I desired fresh flavors as well, so I've chosen strawberry, asparagus and new potatoes as base of our lunch. The cream soup is actually not really a soup, but a rich creamy strawberry essence, just like a fine dessert. The second course has also a refreshing taste: pork medallions wrapped in bacon, rosemary tossed new potatoes, simmered asparagus with - instead of hollandaise sauce - a lemon tasted Béchamel sauce. All the courses can be prepared easily, practically it takes more time to prepare the ingredients than the cooking itself ... and then the long washing-up.

Így tavasz végén mindig lelkes vagyok, mert a piac megtelik friss idényzöldségekkel és az első gyümölcsökkel. Múlt vasárnap is friss ízekre vágytam, így az ebéd alapanyagaiként epret, spárgát és némi újburgonyát választottam. A krémleves tulajdonképpen nem is leves, hanem egy gazdag, krémes eper-eszencia, akárcsak egy finom desszert. A második fogás szintén nagyon frissítő: szalonnába csomagolt szűzérme medálok, rozmaringos forgatott burgonya, párolt spárga és - hollandi mártás helyett - egy kis citromos besamel mártás. Minden fogás könnyen elkészíthető, gyakorlatilag tovább tart a hozzávalók előkészítése, mint maga a főzés ... no és aztán az a hosszadalmas mosogatás.


Strawberry Cream Soup
Eperkrémleves


Ingredients (Serves 3-4):
- 1/2 kg strawberries
- 3 dl cream
- 3 dl water
- sugar, cognac flavor

Hozzávalók (3-4 személyre):
- 1/2 kg eper
- 3 dl tejszín
- 3 dl víz
- cukor, konyak aroma

Preparation:
wash the strawberries, remove stalks and wrong parts. Place the fruits into a blender and process until smooth. Here comes my special treatment: if you don't mind that soup is full of seeds then you can skip this step, but we like if the cream soup contains less seeds. So I put a steel strainer on a large bowl and pour the strawberry purée into the strainer. With a spoon constantly stirring it I mash through most of the purée. In the end only the bigger seeds and pulp pieces will remain in the strainer, meanwhile we get a smoother strawberry purée in the bowl.

Now we can start the "cooking". Combine the strawberry purée with water and 2 dl of cream in a pot, add the sugar and few drops of cognac flavor according to your taste. Start to heat the mixture and stir, but only until the sugar is melted and all ingredients set together. I don't like to cook this soup. Place the pot in cold water to cool a little, then put it in the fridge until serving.

Before serving whip the remaining cream and add little cream clouds with the help of a teaspoon.

Elkészítés:
mossuk meg az epret, távolítsuk el a szárát és a rossz részeket. Tegyük bele az egészet egy turmixba, és daráljuk le egészen finomra. Most jön az én saját kis trükköm: persze ha valaki nem bánja, hogy a leves teli van magokkal, akkor átugorhatja ezt a lépést, de mi jobban kedveljük, ha csak alig van benne mag. Tehát, tegyünk egy fém szűrőt (ti. tésztaszűrőt) egy nagyobb tálra, öntsük bele az eperpépet. Egy kanállal folyamatosan kavargatva paszírozzuk át a gyümölcspépet. A végén csak a nagyobb magok és gyümölcshús maradványok lesznek a szűrőben, míg a tálban egy sokkal simább pürét kapunk.

És most kezdhetjük a "főzést". Öntsük az eperpürét, vizet és 2 dl tejszínt egy lábasba, adjunk hozzá cukrot és néhány csepp konyak aromát ízlésünk szerint. Kezdjük el melegíteni a leves, kevergetve, de csak addig, amíg a cukor elolvad és a hozzávalók jól összeállnak. Én nem szeretem forralni ezt a levest. Állítsuk bele a lábast hideg vízbe, hogy egy kicsit kihűljön, majd tálalásig tartsuk hűtőben.

Tálalás előtt verjük fel a maradék tejszínt habbá, és egy teáskanál segítségével szaggassunk kis tejszín felhőket a leves tetejére.


Pork medallion skewers with rosemary potatoes and asparagus
Szűzérme nyársak rozmaringos burgonyával és spárgával


Ingredients (Serve 3-4):
- 40 dkg pork medallion
- 12-15 slices of bacon
- salt, pepper, ground rosemary

- 60 dkg new potatoes
- 5 dkg butter or goose fat
- fresh rosemary sprig
- salt

- 1/2 green asparagus
- salt, sugar

- 5 dkg butter
- 1 tbsp flour
- 2-3 dl milk
- salt, pepper
- 1/2 lemon

Hozzávalók (3-4 személyre):
- 40 dkg sertés szűzérme
- 12-15 szelet bacon
- só, bors, őrölt rozmaring

- 60 dkg újburgonya
- 5 dkg vaj vagy libazsír
- egy szál friss rozmaring
- só

- 1/2 kg zöld spárga
- só, cukor

- 5 dkg vaj
- 1 ek liszt
- 2-3 dl tej
- só, bors
- 1/2 citrom leve

Preparation:
let's start with the meat. Cut it into an inch thick medallions, season with salt, pepper and ground rosemary. Wrap each medallions around with a slice of bacon just forming nice rings and stick them on skewers. Place the meat in a baking dish, you may sprinkle with some additional oil, cover with aluminium foil and bake in the oven of 200°C for appr. 40 minutes. Before serving grill them for appr. 5 minutes in order to add a little tan but take care not to burn or dry the meat.

Meantime you can take care of garnishments. Clean the potatoes, cut into larger cubes and cook them in salty water. When the potatoes are tender, strain them, then set aside on warm place. Boil some salty-sweet water in a pot and clean the asparagus if it is needed, remove the hard parts as well. Simmer the asparagus for 8-10 minutes until tender but crispy.

For the lemon sauce you need to make a Béchamel: melt the 5 dkg of butter in a pot, then add the flour and stir it until foaming but not browns. Slowly pour the lukewarm milk to it - of coarse constantly stiring it with a spiral whisk - until you get a smooth sauce. Season with salt and pepper, cook for a minute and remove from the heat. I added the lemon juice only as a final step, do not cook it.

Before serving, meanwhile the meat is grilled, heat the goose fat or butter in a large pan. Chop the rosemary leaves into very fine. Add the potato cubes to the hot fat, sprinkle with rosemary, then constantly stirring and shaking the pan roast it until fine golden-brown.

Finally compose your plate with skewers, the potato and asparagus poured with lemon sauce, and ...

Enjoy your meal!

Elkészítés:
kezdjük a hússal. Vágjuk fel a szűzérmét ujjnyi vastag szeletekre, ízesítsük sóval, borssal, őrölt rozmaringgal. Mindegyik medaliont tekerjünk körbe egy szelet szalonnával, majd az így kapott kis gyűrűket húzzuk fel a nyársakra. A húst tepsibe fektetjük, meglocsolhatjuk egy kis olajjal is, letakarjuk alufóliával, és úgy 200°C-os sütőben körülbelül 40 percet sütjük. Tálalás előtt egy kis grillezéssel adhatunk színt nekik, de óvatosan, ne égessük meg, és a hús se száradjon ki.

Mindeközben elintézhetjük a köreteket. A burgonyát megtisztítjuk, nagyobb kockákra vágjuk, majd sós vízben puhára főzzük. Ha kész, leszűrjük, és tálalásig melegen tartjuk. Egy lábasban sós-cukros vizet forralunk, közben megtisztítjuk a spárgákat, ha szükséges, a kemény részeket azért vágjuk le. A spárgát 8-10 percig pároljuk, amíg puha, de roppanós nem lesz.

A citromos szószhoz tulajdonképpen besamelt készítünk: megolvasztjuk az 5 dkg vajat, a lisztet hozzáadva rántást készítünk. Amikor még nem barnul, egy habverővel továbbra is folyamatosan kavargatva lassan csorgassuk bele a langyos tejet, amíg lágy szószt kapunk. Ízesítsük sóval, borssal, főzzük még egy percet, majd vegyük le a tűzről. Csak végső lépésként habarjuk el a citromlevet, ne főzzük már tovább.

Tálalás előtt, amíg grillezzük a húst, hevítsük fel a libazsírt, vagy vajat egy nagy serpenyőben. Vágjuk finomra a rozmaring leveleket. Dobjuk a burgonya kockákat a forró zsiradékba, szórjuk meg a rozmaringgal, majd folyamatosan kevergetve-rázogatva pirítsuk szép aranybarnára.

Végül állítsuk össze a tálat a nyársakkal, burgonyával, citromos szósszal nyakonöntött spárgával, és ...
